There is an option to create your own lavender sugar ingredient, but I’ve always just done the white granulated sugar. It depends on how much effort you want to put in and how strong you want the lavender flavor to be. I actually skip sprinkling the lavender buds on a few cookies, since my daughters get weirded out that they’re eating the plants. You could also make these without lavender, or you can come to my yard and cut mine haha!
But these cookies are chewy, crispy, so easy, delicious, and cute for an event or gift.
For dough:
2/3 cup melted butter
1 cup granulated sugar [There’s an option to make lavender sugar, but I don’t do this.]
1/4 cup honey
1 large egg
1 tsp. pure vanilla extract
2 cups flour
2 tsp. baking soda
1/2 tsp. salt
For finishing:
Coarse-grained sugar for rolling
2 tbsp. English lavender buds fresh or dried
Beat the melted butter, honey, and sugar until smooth.
Beat in the egg and vanilla.
Mix in the flour, baking soda, and salt.
Refrigerate dough for about one hour.
Preheat oven to 350.
Roll into small balls, flatten, and cover in coarse-grained sugar.
Sprinkle the tops with lavender buds.
Space out on a baking sheet.
Bake for 10-15 minutes or until edges are crispy and light brown.
